Car breaks are weird?
I got a used car and compared to the car I had the breaks are different. Mind you this is my second car. I am not much experienced with cars themselves. The problem is the slightest touch on the break and the used car stops aggressively. I have to touch it very slowly in order to stop smoothly if I press “too much” which I don’t it stops aggressively. My old car didn’t have this issue. I am not sure if it is a problem or it has to do with the different engine in each car.

It won't be because of the different engine, but it could be that the brakes are much more sensitive on the new car.
Maybe your old car had a brake issue and you assumed that it was 'normal' to stomp on the brakes. Can not tell from here
When my daughter was learning to drive, the first time she had to stop, the brakes locked up and she yelled an expletive that I had not heard her use before. All was normal, just lack of experience (her braking, my paternal hearing)

Some power brakes are more sensitive than other cars'. When I first started driving in the 1960's and power brakes weren't in every car, my first experience with them was almost going through the windshield since there was no seatbelt in the car back then. You might mention the different cars you're talking about. Otherwise we can't guess which one is normal or faulty.

When brake pads get thin they tend to grab faster.
You probably nee new front brake pads and rotors.
Don't get the cheap pads. They are too hard and make dust, noise, and cause rotor warpage.

It is not a problem or a car issue. The brakes vary from car to car. Some were made with more sensitive braking. Adjust and you will get used to it.

BRAKES stop a vehicle. Breaks mean something is physically broken.
The problem is YOU are not used to brakes that WORK. EVERY car, even cars of the same make/model/year, feels a bit different to drive.

when you just touch the brake does it just about put you thru the windscreen? Take it to a mechanic let him have a drive and ask him if he thinks the reaction disk in the brake booster is lost . My guess with out know what sort of car it is.

The heavier the car, the longer the stopping distance. For example, a train going 55 mph can take more than a mile to stop once the brakes are applied.
It also depends on the brakes and the car. Some higher end cars uses better parts and brakes so that you have better control around curves or slippery conditions.
