why does fish fillet mcdonalds cost so much now?

I think the McDonald's in my area are currently having a 2 for $5 special. That's still too high for what they're passing off as a fish sandwich.

It may be due to the availability of the type of fish they use. If the fish is hard to come by, that would put the price up.

Lazy people who can't cook are willing to pay whatever it costs. 

The cost of all of the food that every fast food restaurant chain serves has gone way up in the last few years,and the biggest reason is that the minimum wage keeps going up.
