AC vs Dehumidifier?

I got a portable AC and it works fine.  The fat hose goes out the window.

When cooling my apt, it collects water that must be drained occasionally.

I noticed that it also has a "dehumidifier" mode.

Since it is collecting water all the time, what would it do differently in dehumidifier mode? It still blows cold air in dehumidifier mode.

It will still collect water, actually more water.  Dehumidifier mode (dry mode in mini-split units) is just a cooling mode with the fan in slow speed.

In dehumidify mode it won't do any cooling,  it will just collect the water. It's giving you the choice on whether you want it to cool or not.
