What happens when you don’t masturbate for seven days?

Nothing happens to me. I don't have wet dreams or blue balls or anything. 

You get what is commonly called as blue balls. Your testicles will start to ache and become very tender, you will also get irritable and feel uncomfortable. Remember your body is always producing sperm and semen but it has limited storage so if you don't get rid of it with sex or masturbation things are going to get  backed up. You might have a wet dream when you are sleeping. If you completely stop masturbating or having sex eventually your body will stop putting energy into your sex organs and it will become more difficult to get aroused or even get an erection.

I think wet dreams are like a pressure relief valve

that keeps your balls from exploding.

Possibly. The longer one goes without ejaculation, the greater the chance of nocturnal emissions.
