Two purposes.
One, an eye patch protects an eye that's injured or on which there's been recent surgery. The patch makes the person keep their eye closed when that's what's needed.
Two, an eye patch on a perfectly healthy eye can force a weaker eye to step up and do its job, getting stronger until binocular vision is restored.
Oh, and three, some people who have lost an eye and don't use a glass eye in its place cover the empty socket with a patch.
