What is the process of handing over an app to a client if I was a freelance app developer?

Question

Say I have built an app, what next? Should I provide the keystore files or keep them with me (or let them sign it)? Should I provide entire repository including all source codes? Any additional links to guides will be really helpful.

It all depends on the agreement. I purchased the rights to use Microsoft Office, but they aren't going to hand over the source code.

I have worked for clients that wanted the source code.  I usually ask them how they want it, and give them some recommendations like, put it on a thumb drive, give them access to the github repo, or put it on Google Drive
