In convection oven slow cooking is somewhat does not happen all the time due to the hot air that is blowing directly onto food instead of just surrounding it, food cooks about 25 percent faster. Generally at a lower temperature, it's a bit more energy efficient than a regular oven

I think if you turn the temp way down. A convection oven is pretty much the opposite of slow cooking.

No need to
Usually when you are slow cooking the lid is on the pan to keep moisture in. With the lid on the air circulating does little to help the cooking process.
If you are braising and want to brown the meat prior to serving and reduce the liquid then remove the lid and turn on the convection fan.

Only if you have the option to turn the fan off
and, better still, if you have a 'heat from below only' setting.

Like a crockpot? No, heat is distributed differently in ceramic than in steel or aluminum

I guess if you turn the temp way down. A convection oven is pretty much the opposite of slow cooking. The movement of heated air actually speeds up the cooking process (and makes it more even).
