As the only actual evidence of a spirit force using a bird to symbolic the spirit (mind), that would be a dove, from the New Testament.
Everything else is just made up stories.

Goose? cluck like an old hen (so a chicken); struts like a rooster(a male chicken), what a turkey, eyes of an eagle(or hawk), --all are bird brained(very small) Might as well compare the mind to a ROCK.

The eagle, symbol of John and the mind using the imagination. It is also Daedalus and Icarus in both levels of flying towards the sun and falling to the sea of the mind.

You try looking into the roles that birds have in different cultures. They had prominent roles in Greek, Egyptian, and Babylonian mythology. There are more, but that should be a good place to start.

Many people think of owls for this, although in actual fact, owls are not very bright at all!

Owls are associated with brains. Not sure about psychic. Maybe a robin can be a harbinger of spring or doom.
