What do these words "captain" and "plots" and "course" mean in this case?

The "captain" is to a ship, what a pilot is to an airplane. Make sure the ship is operating as it should.
"Plots" and "course". Actually many ships, like planes have a "navagator" for this. And the captain has to get the ship on that course. "Plots", mean to lay out a line or course on a map. That is the best route to take to the destination.

The captain is the person in charge of the ship, plots means sets out or determines, and course means direction or route.

captain is the person in charge of the boat. plot is to plan in detail. course is the path to be taken. The person in charge of the boat makes a plan of the path which the boat is going to take. Much simpler to say "the captain plots a (or the) course", wouldn't you agree?

The captain is like the officer in charge of the ship and is responsible for operating it successfully. The ship itself may be owned by a corporation and registered in a foreign country. "Plots" means to intelligently decide upon a course (direction and path across the ocean) for the ship to take.
