For minecraft youtubers, doing a video of 100 hardcore days in minecraft is a great way to get views and subs. I saw a guy go from less than 500 subscribers to nearly 50k subs. How do I, a outdoors youtuber, get views like that?

You need to provide something others don't. What about your channel sets it apart or makes it better? Or at least good enough that someone who fishes is going to take time to watch your videos, among all of the other videos out there.
There are already many good fishing channels on Youtube producing entertaining and useful content, and probably 5x as many mediocre ones. Once an area is saturated, it's pretty much impossible to break in if you're the same as everyone else.
