Why does Apple need you need to turn off "Find my iPhone" for a battery replacement before sending it in? What do they have to hide?
That is some dodgy sh!t they are involved in! Why do they need access to your phone? Why are they going to do anything else with it other than replace the battery?
Is it because Apple sends it to Xinjiang Province in China for Uyghurs in concentration camps to fix and they don't want you to be able to trace it?

In the event that phone needs to be replaced during the course of the repair, Find My iPhone needs to be off, because Apple keeps the old phone and gives you a new one, and typically they'll recondition the old one for reuse. If the old one has Find My iPhone on then it's essentially a paperweight.
They also need to be able to run their calibration/configuration software which will pair the new components with the device. If the calibration software doesn't get run, certain features of the phone may not work, such as Face ID, and the battery won't properly report its health.

They need full access to make sure it's in good working order after tearing its guts out and reassembling it. This is a technical thing caused by Apple's own efforts to make the phone useless to anyone but the owner. Create a fresh backup, make sure your personal data and photos are in iCloud, and erase the phone before having work done on it.
