Next year when the Covid vaccines become more available, will a vaccine be easier to schedule appointment shots and a more easier routine just like getting a flu shot?
Will they make a Covid vaccine by then where you won't be required to get 2 shots but just one and done like the flu shot you just need one?

There already is a one and done one available from Johnson and Johnson. More and more doses of all kinds will be available which will make appointments easier to get. So keep at it. You'll get one. I managed to but it wasn't easy.

Where have you been? There is a one shot vaccine by Johnson & Johnson available now.
