Would Swamp Ash work for a cutting board?

I know it's not standard to use swamp ash for cutting boards, but i kind of need to use it for artistic purpose... though i would also like the cutting board to actually be usable.

husband had to have a kidney removed due to cancer, doctor says to limit red meat to one serving per week - but other (seemingly "high protein" foods?) meats like chicken, fish, etc, are fine.
... but what about buffalo? it seems really healthy (healthier than the ground chicken & turkey i've found) & we love the taste.
here's what i'm hoping someone can clear up for me: if he can eat all the fish & chicken he wants, with those items being obviously high in protein, why *wouldn't* he be able to eat buffalo? could the doctor be talking about beef (since buffalo isn't very popular)?
yes... i've tried getting him to ask his doctor, but i don't see this happening any time soon.
