Here's my understanding from what I've studied:
Deuteronomy tells us that God divided up the nations according to the number of the "Sons of God" - He placed these nations under the rule of these angels and took the people of Jacob (Israel) for Himself:
"Remember the days of old,
consider the years long past;
ask your father, and he will inform you;
your elders, and they will tell you.
When the Most High apportioned the nations,
when he divided humankind,he fixed the boundaries of the peoples
according to the number of sons of god;
the Lord’s own portion was his people,
Jacob his allotted share. "
Deuteronomy 32:7-9 (NRSV)
Psalm 82 speaks of the angelic council (Sons of God) which was given rulership over the 70 nations of the earth. In this psalm, God chastises the angelic rulers ("the gods") for their injustice and iniquity in carrying out the responsibilities that He has assigned to them. God tells them that their fate for disobedience will be to "die like men." Asaph ends the psalm by exhorting God to judge the earth and its angelic rulers, because all the nations actually belong to Him. :
"God has taken his place in the divine council;
in the midst of the gods he holds judgement:
‘How long will you judge unjustly
and show partiality to the wicked?
Give justice to the weak and the orphan;
maintain the right of the lowly and the destitute.
Rescue the weak and the needy;
deliver them from the hand of the wicked.’
They have neither knowledge nor understanding,
they walk around in darkness;
all the foundations of the earth are shaken.
I say, ‘You are gods,
children of the Most High, all of you;
nevertheless, you shall die like mortals,
and fall like any prince.’
Rise up, O God, judge the earth;
for all the nations belong to you!"

This concept of the Divine Council seems very important to the foundation of Christianity - especially since we see in Luke that Jesus sends out 70 disciples to these same nations that were put under these angels.
Is this the correct understanding of the Divine Council?

I am a Protestant - so this is an honest question, and not one that seeks to inflame.
The Hebrew Old Testament was canonized AFTER the advent of Christianity by the Judaic Leaders -- partially in response to Christianity itself.
The Septuagint was the body of scriptures used and referenced by the writers of the New Testament. It doesn't seem logical to me that Protestants should revere the writings of Peter and Paul, yet deny the inspiration of the scriptures they were quoting.

I came across an article which claims that Jesus quoted, or at least referenced, the pseudepigraphical Book of Enoch in the New Testament.
I realize that the BOE was not included in the Biblical canon in all but the Ethiopic Orthodox Churches, but its influence on the NT writers cannot be denied - namely the references from Jude and 2 Peter. I had never heard the claim that Jesus referenced this book, though. If He did, then should we hold this 2nd century BC book in higher regards than we currently do?

...The Nov. 4-7 conference, titled "Re-Imagining," was billed as an opportunity for Christians, especially women, to rethink their concepts of God, Jesus, church, family, sexuality, community and ministry. It featured the theological concept of Sophia, "wisdom" in Greek, a potentially revolutionary way of talking about God rooted in the Bible but only recently revived and expanded by feminist theologians.
With outstretched arms, the participants called on Sophia, a female personification of the divine found in the Book of Proverbs and elsewhere in the Bible, to bless each major speaker. At the conclusion on Sunday morning, participants shared milk and honey in a ritual with overtones of a communion service and prayed in language meant to affirm women's sexuality and sensuality:
"Our maker Sophia, we are women in your image; with the hot blood of our wombs we give form to new life," the group prayed. "With nectar between our thighs we invite a lover," they continued, and "with our warm body fluids we remind the world of its pleasures and sensations." Alarm Bells Rung

St. Jude in the New Testament directly quotes the book of Enoch:
Jude 1:14-15 (KJV)
"And Enoch also, the seventh from Adam, prophesied of these [men], saying, Behold, the Lord cometh with ten thousands of his saints, To execute judgment upon all, and to convince all that are ungodly among them of all their ungodly deeds which they have ungodly committed, and of all their hard speeches which ungodly sinners have spoken against him."
Enoch 1:9 states:
