Lamb is always served well done in Italy, but it is always moist and tender. What is the secret?
Rare or medium rare lamb is very American, but I have never seen it in Italy, where lamb is always thoroughly cooked. How do you get it that way without drying it out and making it tough?

My senior dog, Luigi, (exact age unknown as he is a rescue) has kidney disease and has lost a nearly 1/3 of his body weight. He is otherwise well, happy, and eating well (special kidney diet food) but has gone from 37 to just over 27 lbs. The vet just smiles but doesn't seem to have any helpful suggestions. He is on Azodyl for kidney support.
