What do YOU consider to be the best way to cook walleye?

beer batter, breadings or any other frying and/or pouch recipe's would be cool. thanks already! Let's see who's sounds the best, so I can try it.

BEER BATTER FRIED FISH

1 egg
1 c. warm stale beer
1 1/8 tsp. baking powder
1 c. flour
2 tsp. salt
3/4 tsp. pepper
1 tsp. garlic salt
Fish fillets

Mix all ingredients. Wash and dry fish (pat with towel). Cut fillets to desired size. Heat 2 inches of cooking oil in pan. Dip fish pieces in batter; fry briefly in hot oil turning as necessary. Adjust the batter ingredients as needed so it doesn't get too thick or too thin.

My family fishes for walleye constantly. We use a very basic recipe but I love it. Dip in flour, dip in egg, dip in bread crumbs seasoned with salt, pepper and italian seasoning, pan fry in oil. Serve with tartar sauce.

Lately, I've switched the normal bread crumbs up for panko bread crumbs because I like the texture a bit more, but really, it doesn't make much of a difference.

Easy Baked Butter Herb Perch Fillets Recipe

Serves/Makes: 3

Ingredients:

* 1 pound yellow perch (walleye or pike) fillets
* 1/2 cup butter or margarine
* 2/3 cup crushed saltine crackers
* 1/4 cup grated Parmesan cheese
* 1/2 teaspoon basil leaves
* 1/2 teaspoon oregano
* 1/2 teaspoon salt
* 1/4 teaspoon garlic powder

How to cook:

* Preheat oven to 350°F.
* Melt butter or margarine in a 13 x 9 inch baking pan in preheated oven.
* In a bowl, combine cracker crumbs, Parmesan cheese, basil, oregano, salt, and garlic powder.
* Dip yellow perch fillets into butter, then coat in crumb mixture.
* Arrange the yellow perch fillets in baking pan. Bake for 25 to 30 minutes or until fish flakes easily with a fork.
