I made oven-roasted potatoes about a week ago and they werent so good. I want to try again so Im asking what your favorite Oven-Roasted Potatoes Recipe? What are your favorite spices to add? I added thyme, rosemary, butter, and oil last time.

First boil floury potatoes till they are nearly done. Dry. Squash them gently and not totally. Pour over Olive Oil Scatter them with, sea salt and thyme. Bake high till browned and crisped! Don`t burn the herb
* 1/2 pound purple Peruvian potatoes, scrubbed clean * 1/2 pound red bliss potatoes, scrubbed clean * 1/2 pound small new potatoes, scrubbed clean * 8 small garlic cloves * 2 large shallots, peeled and quartered * Rosemary or thyme sprigs * Salt and pepper * Olive oil
Directions
Heat the oven to 375 degrees F.
Cut the Peruvian potatoes in half or in quarters, about the same size as the small new potatoes. Do the same for the red bliss potatoes. Place all potatoes, garlic cloves, shallot quarters and rosemary sprigs on a baking sheet. Season well with salt and pepper and drizzle oil on top. Toss all to combine and coat in oil.
Place the potatoes in the oven and roast for about 30 to 40 minutes, shaking the baking sheet occasionally, until the potatoes are nicely browned and fork tender and the garlic cloves and shallots are caramelized.
1/2 pounds small new red potatoes (about 15), scrubbed and dried 1/4 cup extra-virgin olive oil 4 to 6 cloves garlic, crushed 1 tablespoon fresh or 1 teaspoon dried rosemary Preheat the oven to 350 degrees F. Pare a narrow strip of peel from the middle of each potato. In a large bowl mix the oil, garlic, and rosemary; add the potatoes and toss well. Transfer the potatoes to a shallow baking pan and roast until potatoes are tender when tested with the tip of a knife. Serve hot. These can also be chilled and served with fried chicken or ham.
Set oven to 450 degrees. Get out a baking sheet, cover with aluminum foil. Spray with PAM. Cut red skinned potatoes into quarters. Put the potatoes on the baking sheet. Sprinkle with Goya Adobo Seasoning or salt/pepper. Then drizzle some Extra Virgin Olive Oil on the potatoes. Put in the oven. Turn at least one time. Once you see them getting browned, turn on the broiler and broil for 5-8 minutes, just so you get that awesome crunchiness. Enjoy!! :o)
