Best Oven-Roasted Potatoes recipe?

I made oven-roasted potatoes about a week ago and they werent so good. I want to try again so Im asking what your favorite Oven-Roasted Potatoes Recipe? What are your favorite spices to add? I added thyme, rosemary, butter, and oil last time.

    First boil floury potatoes till they are nearly done.

    Dry.

    Squash them gently and not totally.

    Pour over Olive Oil

    Scatter them with, sea salt and thyme.

    Bake high till browned and crisped!

    Don`t burn the herb

    Cook Time 30 min

    * 1/2 pound purple Peruvian potatoes, scrubbed clean

    * 1/2 pound red bliss potatoes, scrubbed clean

    * 1/2 pound small new potatoes, scrubbed clean

    * 8 small garlic cloves

    * 2 large shallots, peeled and quartered

    * Rosemary or thyme sprigs

    * Salt and pepper

    * Olive oil

    Directions

    Heat the oven to 375 degrees F.

    Cut the Peruvian potatoes in half or in quarters, about the same size as the small new potatoes. Do the same for the red bliss potatoes. Place all potatoes, garlic cloves, shallot quarters and rosemary sprigs on a baking sheet. Season well with salt and pepper and drizzle oil on top. Toss all to combine and coat in oil.

    Place the potatoes in the oven and roast for about 30 to 40 minutes, shaking the baking sheet occasionally, until the potatoes are nicely browned and fork tender and the garlic cloves and shallots are caramelized.

    Remove rosemary sprigs and serve immediately.

    1/2 pounds small new red potatoes (about 15), scrubbed and dried 1/4 cup extra-virgin olive oil 4 to 6 cloves garlic, crushed 1 tablespoon fresh or 1 teaspoon dried rosemary Preheat the oven to 350 degrees F. Pare a narrow strip of peel from the middle of each potato. In a large bowl mix the oil, garlic, and rosemary; add the potatoes and toss well. Transfer the potatoes to a shallow baking pan and roast until potatoes are tender when tested with the tip of a knife. Serve hot. These can also be chilled and served with fried chicken or ham.

    Here's what I do, it is really simple.

    Set oven to 450 degrees.

    Get out a baking sheet, cover with aluminum foil.

    Spray with PAM.

    Cut red skinned potatoes into quarters.

    Put the potatoes on the baking sheet.

    Sprinkle with Goya Adobo Seasoning or salt/pepper.

    Then drizzle some Extra Virgin Olive Oil on the potatoes.

    Put in the oven.

    Turn at least one time. Once you see them getting browned, turn on the broiler and broil for 5-8 minutes, just so you get that awesome crunchiness.

    If you can find it - use Lipton Recipe Secrets Garlic & Herb. You mix the seasonings with Extra Virgin Olive Oil & bake & they turn out really good.

    My mom's version of this uses EVOO, garlic,thyme, & oregano on white potatoes that have been cut into wedges and baked for 45 minutes until they turn tender and begin to caramelize.

    this is my mom's recipie. soo good

    slice the red, waxy skinned potatos into wedges

    put onto baking tray

    sprinkle on slat, cumin, 5 spice, and FRESH rosemary ( if you can find it, if you cant, dried is OK too )

    instead of oil, use melted butter ( yeah, its a little fattier but rlly delicious) not alot, maybe like 3 table spoons for all the potatos ( not 3 tablesppons per slice, for all of them togther)

    bake until golden brown

    ENJOY!

    ( leave the rosemary on, it adds to the flavor )

    this here is two diff ways that i have done it and they come out great...

    this one here was a hit when i did a catering party

    now you can peel or leave skin on..i leave skins on..

    rinse off and cut into cubes potaote of choice ( i use regular white potatoe mostly )but red ones are good too..

    anywayyyy..lol

    rinse and cut into cubes/wedges

    pour zesty italian seasoning in a bowl and toss tatoes in and coat them well...

    then put ALL into a baking pan that is sprayed with non cooking spray....

    add dash of garlic/italian seasoning/crushed red pepper...

    bake 350 for about an hour...use fork to test doneness...

    OR i do the same with just plain olive oil and my fave seasonings...

    italian seasons/garlic powder/onion powder/crushed red pepper..

    bake the same way.

    I make mine in my electric roaster. I poke holes w/a fork in the skin and rub them in salt. They are soooo good.
