We get a good piece of corned beef and cook it slowly, then put in the cabbage, red potatoes, onion, celery and a carrot and cook on low.
We eat it with rye bread and butter and applesauce.
Next day, corned beef on rye sandwiches with horseradish sauce or horseradish mustard. I put a piece of cabbage on the sandwich too.
My mother used to make it with the canned corned beef and serve it with mashed potatoes. That was good too.
The reason corned beef became a tradition among Irish Americans is that the Irish immigrants in N.Y. who were poor would get meat from the Jewish grocers either cheap or free at the end of the day. It would usually be corned beef. Corned beef is actually a Kosher meat. The grocers would throw in some cabbage and maybe a few potatoes. So the Irish immigrants ate that a lot.

I don't eat corned beef and cabbage on St. Patrick's Day. I know very few people who do. It's not really an Irish tradition anymore.

Actually in Ireland is ham and cabbage.and St. Patty was born in Scotland. Just a bit of information for ya.
Personally what does it for me is lean corned beef, enough but don't overdo it, save room for some nice boiled potatoes, some sweet baby carrots, and some overcooked cabbage that almost wilts away in your mouth. smother it all in too much butter and season with salt and pepper. Eat it when it's so hot it's almost burning your tongue and wash it down with a ice cold Guinness If you don't have a heart attack while your dancing it off you know St patty is loo kin out for ya.

Actually, I'm not a big fan of CB. It gets it's name from the chunks of rock salt that is canned with the meat. Canned meat, of course, is what separates the men from the boys! I can't stand most corned beef, but my friend (and his wife, I'm sure) have invited me for dinner, and he always makes CB&C.
Something tells me that there may be a single female there tonight...

some here on a plate with cabbage carrots and potatoes, good rye bread, classen pickles, a little mustard kids dont like cabbage so they eat theirs with potatoe salad or french fries...im going to make a plate right now.
