Okay so every time I rub behind my ear, where my ears are pierced my fingers smell really gross and it has always been this way, so they aren't infected. But why does it smell so gross? And I always wash behind my ears so that's not it either.

I get that too, I'm pretty sure it's a buildup of soap and dead skin cells. I take my earrings out every night and clean the area with an ear cleaner. I leave my earrings out overnight, this has really helped me with the smell. Good Luck!
Body reacting to any other metal other than gold is a very common symptom. I have seen and helped with cases where even keloids come around the ear hole or piercings. The indicated medicine is Stannum Metallicum 30 three doses a day for three days . Repeat if necessary. The smell will automatically go when the imbalances are corrected by the medicine.
At least some of you would be quite surprised to see those problems ailing you for sometime are figured in the materia medica for Stannum exactly the same way as you were experiencing. Could just be a build up of bacteria and oils from your skin that goes rancid. I find taking the piercing out and cleaning both the earring and around the post hole with rubbing alcohol cuts down on that.
If you think it might be the metal that is causing a reaction, you could try switching to surgical steel earrings or 14 KT gold. Those metals have the least amount of nickel in them and are less likely to react with acids from your skin.
