What are some dinners that can be frozen and used later?

A group of my friends want to all make a meal each, freeze them and the give them to a friend who just had a baby so she and her husband can cook them at for dinner at a later time. I was wondering if anyone had a good recipe that I can do? One of the girls is already doing lasagna so I need another idea.

How nice ;) Good idea.. I like to do this a lot too for people that need a little extra help!

I also like to add a little card with my dish that tells them exactly what they have to do to prepare it when there ready to heat it up- just to help them a bit more...

Chicken and Dumplings (with canned buscuits)-this is cheap-easy and cheerful!! This recipe is for freezing...

Chicken cooked and diced to bite size pieces.
Cup of chopped white onions
6 Cans Chicken Stock/broth
Boullion Cubes (if like it a bit more salty and also gives more chicken flavor)
1 tsp. poultary seasoning (just a little bit-not to much to over power the soup)
Salt and Pepper
One Bay Leaf
Desired amount of sliced or diced carrots
Desired amount of sliced or diced celery
One can Chicken gravy
One can of butter flavored buscuits (the roll that you pop open)
Grated parmesan cheese (for garnish if desired)
Diced chives (for garnish if desired)-in this case I would use dry chives.

In a big soup pot add onions, celery, carrots, stock, boullion cubes (if using too) seasonings, bay leaf and stock. Let simmer just until vegtables still have a little bit of a bite to them. Add chicken gravy (this thickens it) stir- add chicken chunks. Turn off let completely cool. Pour into freezer safe dishes. I like to use cheap re-usable or disposable containers that you dont need back from your friend. Then freeze.
This will serve up as the perfect gift. Give to your friend with the garnishes if you choose and the canned store bought buscuits.
When she re-heats- she will thaw in refrigerator- then cook on med-heat on the stove with lid over it until hot and bubbly. Towards the end of cooking she will open can of buscuits and cut each buscuit in quarters (there will be four pieces to each buscuit) and she will drop them in and place lid back on pot. let cook for 10 minutes. If she so chooses she can then garnish with parmesan cheese and chives.
Hope you enjoy this idea ;)

meatloaf is great just put it in a aluminum pan for cheap and easy clean up for whomever your giving it too.

I also love chicken tacos

3c cooked shred chicken
8oz salsa
1 can black beans *drain them you must drain and rinse them
1/2 tbs cumin, coriander, garlic powder

heat all this on the stove top once it is cooled place in a gallon ziplock bag lay flat in the freezer.

all of this reheats or cooks easy

Any kind of chicken or tuna casserole dish will freeze safely.
Shepherds pie, Chili con Carne, Meatloaf, Mac'n'Cheese, etc.

Make somg bbq. It freezes very well and it is super yummy! You could also make some pepper steak. Chicken corn soup is a great idea as well! It is quick to warm up and tastes great!

Anything you see in your grocer's frozen food section can be made at home and frozen. Let cool, label, freeze and provide reheating instructions for the busy Mom.

(If she's going to be breastfeeding, go light on onions and garlic)

Meatloaf, twice baked potatoes, mac & cheese, chicken & stuffing casserole, waffles & pancakes, broccoli rice casserole, pulled pork barbecue, meatballs, enchiladas, chili mac, pasta dishes ... etc all freeze and reheat very well.
