We will be going to Disney for Martin Luther King week-end, January, 2012. I'm thinking that Monday will be the least busy day, even though it is a holiday, because people will have to leave Monday morning to get back to work for Tuesday. I want to do the Magic Kingdom on the least busy day of the week-end (and I figured both Saturday and Sunday will be very busy due to the long week-end)... would you pick Friday or Monday? Why?

what makes you think that people will be leaving monday morning to get back to work/school on tuesday? you're not doing that so why do you think everyone else is? the actual holiday is typically the busier day. personally i'd go on the friday before cuz most people DON'T get both friday and monday off for MLK day so those people will probably arrive later in the day on friday and not go to the parks until saturday.
Go on Friday as early as possible. Most people will have Monday off, but not Friday. Unless they are extremely lucky. Bring a jacket or a sweater because it can be cool in January. The Magic Kingdom is a great place to visit.
Based on this year's calendar I would go on Friday if you will be there then. This year there were no Extra Magic Hours on Friday at the MK and there was no evening parade. If that holds true next year, that's always the best day to go to the MK. Based on this years calander Epcot would be the best park on Monday. Before you leave I would consult a good crowd calander like the one at www.easywdw.com or www.touringplans.com There are people that do nothing but figure touring plans and best days calendars, best to leave these decisions to them :)
I agree with everyone else for two reasons. One, most employees I know spend Friday reaching their destination if they take a vacation day at all. And two, don't forget the locals who will have Monday off and decide to spend it at the parks. I'd say Friday is the best day to spend it at MK during that holiday weekend.
