In my mother's will, her assets will go to a revocable trust upon her death. My older sister is the Trustee and Executrix of the will. In the documents, I am named as a backup, in case my sister is unwilling or unable to carry out her duties. Do I have any legal protection in the will as a beneficiary?

Not as you have phrased it here. Your mother's trust should be revocable during her lifetime and IRREVOCABLE at her death. This would mean that mom could change her mind and leave you or your sister nothing and all of her estate to the Humane Society. But once she dies, she can no longer change her mind and if the trust is IRREVOCABLE, then you would receive whatever she left for you in the trust.
The title of the trust may say that it is revocable, meaning that it may be changed by your mother during her lifetime. The devil is in the details, not in the title.
