need help cooking a pot roast?

Are you cooking it in the oven or a crock pot?
Many ppl insist on seasoning the roast then browning in a pan. Not necessary.
I simply season mine with some garlic salt, place in a crock pot with a cup of beef broth (my crock pot cooks a bit hot so it needs a bit of liquid), 1-2 bay leaves, 1/2 onion cut into thirds, 1-2 celery stalks cut into one inch pieces. The celery and onion simply add flavor. Crock pot is on high and covered for about 4-5 hours, until fork tender. Then I add in the quartered red potatoes, zucchini and carrot. You don't want to add those too early since they will become mush. Just cover and cook until potatoes are tender.
Or, you can cook it in the oven, similarly. If you want your roast rare, then you need a meat thermometer so you will know when to take it out. 145 degrees is rare, 150 is medium rare, 155 is medium. Something like that. I never use a thermometer, but that's only because I've been cooking for over 40 years and pretty much know what I like and how to do it.

in either crock pot that will hold it and some veggies, or in a roasting pan, or oven proof casserole dish, put in the roast, fill half full of water. add some salt pepper, oregano, quartered onions, little carrots, potato pieces and put the lid on or cover tightly with aluminum foil.

turn crock to high and oven to 325F and let it cook for about 4 to 5 hours.
