I was thinking of writing a "minimalist" story where each chapter is a page or less. The goal would be to boil the story down to the raw essentials and try to create emotional power in very few words. My plot would be a simple boy meets girl/coming of age. Thoughts, anyone?

It wouldn't appeal to me. If I'm enjoying a story I'm not in a hurry to see it end. But, your audience is out there so go for it.
I agree with the poster above me, if I'm enjoying a good book I don't like to see it end. However, I think your book can be a good concept to the correct audience and I do believe there are readers out there who would enjoy a minimalist book. Just make sure your character development and plot development is there or it may fall flat. Sounds difficult to do with a 1-2 page chapter book, but it is possible.
I think it would be an interesting challenge. However, it is not original. Fairytales have been doing that for centuries, and short stories have been doing that as well.
