Btw, you should know that there are degrees of strictness in low-carb diets (or "ways of eating") though, mostly depending on the total amount of carbs allowed per day (and most low carb diets count "net carbs" but the stricter ones often use "total carbs").
For example, the strictest would be the ketogenic (keto) diet, the most lenient would probably be the Paleo diet and the "new" version of Atkins and similar ones, with diets like LCHF (low carb, high fat) and "original" Atkins being in-between.
Once you figure out which diet/way of eating you'd want to follow, then just google search strings like these (also click on the word IMAGES at top of the results pages):
... recipes keto
... recipes LCHF
... recipes Paleo
... low carb foods (though be prepared for disagreement here and there)
... high carb foods
... how to low carb
... low carb snacks
Also see the two videos below which give a bit of reasoning and history behind low-carb versus high-carb diets, etc.

Just remember what is high in carbs and avoid them. No potatoes with your dinner - just have some more other vegetables to fill up your plate. Avoid pasta, bread, rice, and added sugar. That'll be enough to get your carb intake down to a non-diabetes-inducing level.
Of course the famous low-carb diet is Dr Atkins, and there's at least one Atkins recipe book (written by his wife!) full of ideas. The diet is for losing weight, and it will do that if you follow it strictly. The idea is that avoiding carbs gives you no "quick-fix" calories so your body will have to turn to burning up stored fat, and that'll cut your weight. Once you're down to a good weight, you can be more relaxed about carbs, but still watch them. To some extent, it's true that fat people have more of a diabetes problem.
Just for one I happen to like, http://www.jamieoliver.com/recipes/chicken-recipes/roasted-chicken-breast-with-pancetta-leeks-and-thyme/ gives you dinner all in one pan. No potatoes, pasta or rice, and it makes up for that by giving you a whole leek to eat (I've noticed most recipes including leeks use about half a leek per person). Now look at the carb level on that page - see what I mean?

There are no recipes - just avoid high carb foods and recipes or limit intake some amount of carb is required
Any Sugar
Any starchy vegetable/grain (Potatoes, beans, corn, peas, limas, etc)
All bread products
Fruits are carbs - but a good choice.
Read the labels on canned goods and sauces if the carbs from sugar is greater than 25% of the total carbs - don't buy it.
