I'm about to buy an e-bike and all the gear to start doing uber eats and food delivery. When I buy all my gear like helmet, bike lock, insulated bag, bike tool exc... Would that stuff count as deductible for taxes?

Like with the bike, everything has to be used exclusively for work for it to be as a business deduction.

Yes, depending on a number of things like is it primarily for work and you would have to depreciate it over the estimated useful life. You can't take it all the first year.
And remember, a deduction does not mean you pay nothing for it, its still an out of pocket cost. And unless you expect to be doing it for 4-6 years or whatever the depreciation period would be you might not get an entire deduction.
