What does the Steelers insignia on their helmet stand for?

The three diamonds - red, blue, and yellow?

It's the Hypocycloid from the Steel Institute used by permission.

The story of the logo is at http://media3.steelers.com/tradition/logohistory/

(Interestingly enough, the Steeler's division has the three unique helmets in the league -- Browns (no logo), Steelers (logo only on one side) and Bengals (that rat's nest or whatever it is with the tiger stripes). (And of course, the Ravens, with the traditional logo on each side, after a nationwide search for the ugliest logo a new team can use).
