can all purpose flour be substituted for cake flour?
i have a cake recipe calling for cake flour, but i only have all purpose, is there a big difference?

cake flour is much finer than all purpose flour. You can use all purpose flour, but your cake will be less than perfect. There is also the problem that you do not use the same quantity of all purpose flour as cake flour. You have to use less, 2 tablespoons per cup.

You can use all purpose flour for just about anything when you are baking, however, for best results, use a flour sifter and sift it into the bowl, add dry ingredients and sift them all together again. You can just scoop and sift into the same bowl. Cake flour is lighter, which allows more air, which makes it easier for the cake to rise. Sifting will allow air in and do basically the same thing. Cake flour is always better (sift it, too),but unless you are in a bake off, I would not worry too much about it.

It'll work but cake flour does make a difference in the way the cake rises.

you can substitute cake flour with all purpose flour,but you need to use 2 tablespoons less per cup of the all purpose flour.I do it all the time and have never had a problem.

Only if you sift it a couple of times before you measure it.
Cake flour is finer.
