    Ham and Potatoes Au Gratin

    Serves: 2

    Occasion: Any

    Effort: Easy

    --------------------------------------------------------------------------------

Any time anyone asks for a recipe here, I give them this, it's easy and healthy and oh so yummy!!!

    Cilantro Lime Chicken Skewers

    ------------------------------...

    3tbsp olive oil

Juice of 2 or 3 medium limes

    3 Tbsp fresh chopped cilantro

4 boneless skinless chicken breasts cut into about 1 inch wide strips

3 finely chopped cloves of garlic

    salt, to taste

    pepper, to taste

about 15 bamboo skewers soaked for approximately 1/2 hour to an hour in water

Combine oil, lime, cilantro, garlic and salt and pepper: mix well. Add chicken and marinate at least 1 hour, do not marinade more than 2 hours as the lime juice will start to cook the chicken. Thread the chicken onto skewers. Grill over a medium low to medium fire until juices run clear. You can also put them on a grill pan on the stove or a George Foreman type grill. You don't have to put them on skewers, you can grill them as strips or as whole breasts.

    Cook some stir fry...

Get you some nice tender steak. Cut them into about one inch pieces. Pick out some of your favorite fresh vegetables. I suggest thinly sliced carrots, broccoli, sliced red potatoes, and even some pineapple cubes. Warm up the skillet to medium to medium high. Add some oil. Then the veggies for about a minute, then the steak and sauce. For sauce I suggest some kind of teriyaki/ginger sauce with some curry powder. Cook it until the steak is done the way you like it. Eat it plain or add some tortillas rice and cheese. It is good.

P.S. Try adding an egg as well.

    Beef noodle wraps, so awesome

Ok all you need is beef stir fry meat, beef itchy ban noddles and wraps.

Ok so you cook they beef with a BBQ sauce of your liking, or you can do this with Honey Garlic sauce.

When your meat is almost done cook your three minute beef noodles, drain the water leaving about an inch left and add the beef seasoning.

Lay out some wraps, garlic ones work best but up to you, put some noddles in and some of your beef, then roll it up like a burrito.

So good, I haven't found anyone who didn't like this and it's soo easy to make, hope you enjoy it.

Source(s): I make it all the time and it's always been a hit

If its hot out, and you want a cool salad, here's one

1/2 lb chicken breasts, cooked (ie: boil or grilled), boned and skin removed, and chilled. Or 2 boneless breasts.

    1/2 avocado, ripe and diced

    1/2 bunch cilantro, finely diced

    1 tomato diced

1/4 of a cabbage, sliced and diced

    diced celery/onion, optional

1 jalapeno, finely diced with seeds removed, optional

    mayo

    salt/pepper to taste

Pull apart the chicken breast and shred or dice. Put aside.

    In a large bowl

Add the cilantro, tomato and avocado.

Add the celery / onion, jalapeno dash of salt/pepper.

Add the cabbage and 2 -3 tbsp of mayo or just enough to moisten to your taste.

Chill for 1/2 hour and serve cold, topped with the chicken or mix the chicken into the salad before serving.

The easiest thing I make for dinner is- I take a can of beans (in my case, vegetarian beans) and I will mix them with a can of Hunt's tomatoes with sweet onions. I will make up a corn bread using Jiffy Mix, 1/3 cup milk, and an egg.

This is a pretty healthy soul food and it is very good.
