I need new recipes for an individual on a budget?

    I do web design for an organization in NY that will soon be putting recipes online that will help you out.

    take a look at http://www.queensgalley.org/ and bookmark it. I would expect to have some recipes up within the next few days (at least that is the plan). If you like, I will be more than happy to send you a message when it is done.

    Give me a few minutes and I will have a good one or two that I like. It is good and cheap (and is really good for leftovers as well).

    Thin Pasta With Mushrooms

    1 pound chitarra pasta (substitute with spaghetti)

    2 tablespoons olive oil

    2 garlic cloves, crushed

    4 cups diced porcini mushrooms

    6 ounces heavy cream

    1 tablespoon truffle paste

    Salt and pepper

    Parmesan, grated

    Cook chitarra pasta or spaghetti according to package directions. Do not rinse pasta with cold water.

    In a large skillet, heat the olive oil, and add the crushed garlic. Heat the garlic in the oil for a few seconds to infuse the flavor of the garlic in the oil. Remove the garlic, and set aside.

    Add the porcini mushrooms to the skillet, and cook for approximately 5 minutes, or until tender. Add the heavy cream, truffle paste, pepper, and cook for 2 minutes. Add the cooked pasta to the skillet and mix all ingredients together.

    To serve, plate pasta, and sprinkle with grated Parmesan.

    Potato Chip Chicken

    Four 6- to 8-ounce chicken breasts (you can use also use chicken cutlets or chicken thighs with bones, if desired)

    6 ounces potato chips

    1 clove garlic, minced

    4 tablespoons of butter

    1/4 tsp. ground black pepper

    Preheat oven to 450 degrees F.

    Melt butter in a small pot. Add garlic to it and let cool slightly. Crumble potato chips in food processor by pulsing for 30 seconds, or place paper towel over chips and roll back and forth with a rolling pin until chips resemble crumbs. Mix in black pepper. You will have 1 1/2cups. Place crumbs on a large plate.

    Cover a large baking sheet with aluminum foil. Dip one chicken cutlet onto butter garlic mixture. Place cutlet on potato chip crumbs and press down slightly to insure crumbs stick. Turn cutlet over and repeat on other side. Place on prepared baking pan. Repeat procedure for remaining 3 cutlets.

    Place in preheated oven and bake for 12-15 minutes (The cooking time for breasts & thighs with bones is 30 to 40 minutes). Make sure cutlets are cooked through, still tender and that the topping is golden brown. Serve with mashed potatoes.

    People look down on peanut butter and jam sandwiches, but if you'll make it part of a meal such as breakfast, it is actually nutricious and inexpensive.

    2 slices whole wheat bread

    2 tablespoons peanut butter

    2 tablespoons jam

    1 banana

    1 cup skim milk

    The above provides 1/3 fat and carbs, about 1/2 fiber and protein, 1/5 vit c and iron, and 40 per cent of calcium for the day. Not bad considering some of the breakfasts kids eat. Watch for "over-ripe" bananas. Sometimes they are not so much over-ripe as being excessed because a new order is coming in. I get them locally that way for 25 cents a pound. Find out what day-old bread store has good whole wheat bread and when. You should be able to save 30-50 per cent on bread that way.

    Eggs are an excellent source of protein, and cheaper than meat. 8 large eggs equals 1 pound. If they are, say, 90 cents a dozen, then they are 60 cents a pound. For a change, hard boil some eggs, mix with mayo type salad dressing, and then mix in taco seasoning to taste. I watch for the local store brand to be on sale for 25 cents/packet and stock up.

    Jack mackerel is available for about $1 for a1 pound can, cheaper than tuna. Mix with an equal amount of crushed generic saltines and 1/2 cup of dill pickle relish, and fry. That'll yield 4 servings as part of a meal.

    It is possible to eat pretty good and a very restricted budget with a little attention and imagination.

    Ramen isn't really that great for you, it might sustain life for a couple weeks, but it gets really boring.

    Baked Potatos are easy (5 1/2 min. in microwave) and cheap ($2 for a huge sack)

    Rice is also good if you have a stove because it's versatile you can just eat it white, or with some soy sauce or butter.

    Pick up some tuna in a can and you can make some tuna fried rice, which is one of my favorite poor man all-in-one meals...you just need some rice (50 cents for a pound), soy sauce, can of tuna, a little butter, a pot and a pan...I learned this one from watching the guys at the hibachi grill when i could afford to eat there. Being observant paid off.

    Cook the rice-1 cup rice, 2 cup water, boil on high, once boiling turn down to a simmer and cover, takes about 15 minutes.

    Let the rice cool and heat the frying pan on high, coat bottom with butter, and dump in rice. spread thin and let sit until it starts to separate then mix around and repeat. Pour soy sauce over rice (just dump a little on and mix, and keep doing until a golden brown) Mix in tuna and wallah...plus that makes enough for like two nights.

    It's not the most glamorous meal, but sacrifice now to live large later...if you try it and like it hit me back, I've been on the budget plan for about 8 months and have been experimenting.

    If you want junk, the mac and cheese, top ramen, etc.

    But if you want healthy, why not fresh fruits and veggies? You can get a lot of food and its cheaper. Also try to pool your money together and that way you can buy a lot more food if everyone pitches in $2-5. Way better than going to McDonalds too!

    Here's a recipe for 4-5 people.. so you can pool your money together or scale it down for just 1

    CHICKEN SPINACH SALAD

    3 bunch fresh spinach washed and dried, or cheat and get 2 pkg of the prewashed ones at the market

    3 chicken- boneless breast, grilled or boiled, then diced and chilled.

    2 cup dried cranberries

    2 cup chopped pecans or walnuts or both.

    1/2 cup sunflower seeds, or put on side

    1/2 cup feta cheese

    any viniagrette dressing

    Mix ingredients together and add dressing right before serving. Best serve chilled. Goes great with a glass of iced tea!

    MEXICAN CABBAGE SALAD

    2 cabbage, finely sliced

    2 avocado, ripe, peeled and diced

    2 bunch cilantro/coriander, finely diced

    3 large tomato diced

    1/2 c diced celery

    1/2 c brown onion, diced

    1 fresh jalapenos, seeds removed then diced

    Mayo

    salt/pepper to taste

    Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.

    Add the avocado then 2 -3 cup of mayo or just enough to moisten to your taste. Mix well.

    Chill for 1 hour and serve cold

    Serve the above with bread and beverage.

    frito pie, hot dogs, chicken salad, ham salad, spagetti, pasta.

    Mexican Casserole is a great one too. Here is the recipe:

    1 pound ground beef (Cooked and drained)

    1 bad shredded cheese

    1 can rotel (drained)

    1 can Ranch style beans

    1 can cream of mushroom soup

    I bag tortilla chips

    Cook meat and drain and then mix all of this together. In casserole dish layer chips, the "mix", then cheese. Repeat until gone. Spread cheese on the top and bake at 400 until cheese bubbles on top.

    It cost about $7 to make this and leftovers are great with chips or in a taco shell or tortilla.

    There are a lot of things you can make on a budget.

    When I was in college and struggling, there was always the old standby of Ramen noodles. I would spruce them up with spices from my cabinet (garlic, seasoned salt, etc).

    Mashed potatoes are good for an inexpensive side. Spaghetti is cheap and you can make a lot quite easily (freeze extra sauce for a quick heat-up). Meatloaf goes a long way and again, extra can be frozen.

    Try your local flea market or farmers market for fresh, inexpensive produce. May of the grocery stores have meat that is going out of date in a few days that they mark down. As long as the meat is fixed that day or frozen it's totally fine to eat. Aldi grocery store or even Cub are less expensive than your more know grocery stores. There's no reason to live off off just Ramen...although it does seem to be a right of passage for college students!

    Here's my favorite one. I buy a bag of chicken wings at Costco (or wherever it's on sale). Mix 1 can of diet cola with 1 cup of ketchup. Put it in a ziploc bag along with the chicken and let it sit for about an hour or so. Then put in the oven and cook at 400 degrees for about 30 minutes, or until the chicken is done in the middle. It's soooooooooo yummy!

    There are lots of really great meals you can make with sweet potatoes. For example, split a baked sweet potato, and fill with a mixture of black beans, a little chopped tomato, chopped onion or scallions, and salsa, then top with cilantro and a dollop of plain yogurt if you wish. It's a hot filling meal that really tastes good, and total cost is about $2.00 per person.
