How do I hard-boil eggs?
I can never get them to come out right....either they are not fully cooked in the middle of the yolk, or the shell sticks to the white of the egg when I try to peel it.

Foolproof Hard-Boiled Eggs
From America's Test Kitchen. Really works!
3 large eggs
water
1. Place eggs in medium saucepan, cover with 1 inch of water, and bring to a boil over high heat.
2. Remove pan from heat, cover, and let sit for 10 minutes.
3. Meanwhile, fill medium bowl with 1 quart water and 1 tray ice cubes (or equivalent).
4. Transfer eggs to ice bath with slotted spoon and let sit 5 minutes.
5. Tap each egg all over against countertop to crack shell, then roll egg gently back and forth several times.
6. Begin peeling from air-pocket (wider) end.
7. The shell should come off in spiral strips attached to thin membrane.
8. Hard-boiled eggs can be refrigerated for several days.
9. You can double or triple this recipe as long as you use a pot large enough to hold the eggs in a single layer, covered by an inch of water.

Boil your water. Place your eggs in the boiling water, (use a serving spoon or ladle to gently set the eggs into the boiling water). Bring the water back to a rolling boil and boil for 5 minutes. When done, run cold water on the eggs to cool the eggs. Peel the eggs after they have been allowed to cool. This will keep the shells from sticking to the egg while peeling.

There are many ways to do this, and you will get quite a variety of answers! The way I do them is....put eggs into pan with cold water from tap. Bring to boil and let boil 5 minutes. Turn off stove and let pan set for 10-15 minutes. Drain and cover with cold water, and start peeling them immediately. They will peel much easier while egg is hot - if you wait until the egg is cold, the shell will be much harder to remove. Good Luck!

To hard cook (boil) eggs:
Gently place eggs in a single layer in a saucepan.
Add enough cold water to cover eggs with 1 inch of water.
Cover pan and bring just to a boil, over high heat.
Remove from heat and let stand about 15 minutes for large eggs. (Adjust time up or down by 3 minutes for each size larger or smaller.)
After 15 minutes, pour off the hot water and rapidly cool eggs by running them under cold water (or place in ice water) until completely cooled.
Refrigerate and use within a week.

These are taken from allrecipes.com, but it's the exact same way I've done it -- and they're perfect everytime!
Place eggs in a saucepan and cover with cold water. The water level should be about an inch above the eggs.
Bring water to a boil; immediately turn off heat. (Don’t let the eggs continue to boil. Sulfur compounds in the yolk turn an ugly shade of green when eggs are exposed to high heat.)
Cover the pan; let eggs stand in the hot water for 14 minutes (small eggs) to 17 minutes (extra large eggs).
Drain eggs and cool in bowl of ice water.
Refrigerate hard-boiled eggs for up to one week.

Start you eggs in cold water. Bring to a boil. Eight minutes at slow boil (just above simmer) will give you a nicely done hard-boiled egg (although, I often let mine go 10 minutes). Then, rapidly cool them by running cold water over them. This process may take 3-5 minutes, depending on how many eggs you boiled at one time. The cold water helps to release the shells. If your eggs are "from the chicken fresh" you will always have a hard time peeling them.

I frequently do 8-10 minutes. I might want to upload that you ought to placed the eggs contained in the water and then carry it to a boil. this can look like person-pleasant sense yet i understand those who've dropped eggs into boiling water and puzzled why their eggs were exploding. So. Yeah.

This always works and gives me perfect hard-boiled eggs. Put them in a saucepan w/cold water. As soon as the water comes to a boil, remove from heat and put a lid on them. Wait 15 minutes, then take them out and submerge them in cold water. They end up perfectly done and the cold water at the end is what helps to make the shells come off easier.

Put egss in the water, wit until the water boils and then coun 6 minutes. The white of the egg sticks to shell after cooking when egg is really fresh, there in nothing you can do about it
