Hamburger Question Is it bad???
Why is it when you buy hamburger its nice and pink on outside and brown inside?? Does this mean its bad?

No, it's not bad. The pigment responsible for the red color in meat is oxymyoglobin, a substance found in all warm-blooded animals. When exposed to air, the natural pigment combines with oxygen to produce the red color, which is referred to as "bloom." The interior of the meat does not have the red color due to lack of oxygen to cause the "bloom" to appear.

Actually I have noticed this as well. .. it's a good question because in most cases the hamburger is still good. The reliable things to check are 1) the expiration date and 2) the smell of it. If it's even slightly stinky, throw it away. It should have little odor or a slight "meaty" smell.

it could be die or blood working to the surface, smell it, if its just a little bloody smelling rinse it with cold water and smell again, there should be virtually no smell now, if you think it smells bad from the start, you can also feel it for a slimy feeling if your in doubt. if your still not sure, throw it out!!! at any rate, if you had to do this test its not real fresh and if not spoiled you should cook it well and use it immediately (i would brown it up for tacos, spagh., chili, etc. and freeze it cooked up if not used that nite, but mark it in such a way that you will use it right away upon thaw.)

I'm not completely sure, but I think raw hamburger loses it's pink color with age.

I know that when I have ground meat and it is getting old it starts turning brownish, so I think that they are not good.

that means it has been chemically induced to stay red after being too old to do it on it's own
