Hello there.
First, the "crouching tiger": refers to the older female character (who never got married, and is kinda 'wild' like a tiger) and her style of fighting is the tiger style.
Second, the "hidden dragon" is the younger female character (she is strong and bold like a dragon, but she is 'hidden'- has a secret identity), and she fights 'dragon-style.
But, before knowing all this, you have to understand that kung-fu has 5 basic fighting techniques, named after different animals, and 'tiger' and 'dragon' are considered to be the hardest (before, for example, the 'snake' style). It also probably sounded better for the movie than "Crouching monkey, hidden snake", right?

I don't know but I've always speculated that the Crouching Tiger referred to the old woman that was a brilliant and talented fighter who was waiting to pounce on the men who she thought oppressed her for years because she was a woman.
I thought that the hidden dragon referred to the young girl to symbolize that her talents have been hidden/unknown. She is secretly a brilliant fighter and no one knows. This is how I've always interpreted the name of the movie. I don't know if it's correct.

If you watch the subtitled version rather than the dubbed version it does explain how the phrase is a metaphor. I can't remember exactly how it goes since it's been so long since I last saw it.

I always thought that it was a form of fighting like praying mantis. I could be wrong though
