Need help with a seafood recipe using lime juice?

I remember reading in a magazine how certain types of seafood could pe preapred by soaking in lime juice instead of cooking. This sounds great for summer, but I don't know what it is called or how to do it. Does anyone have any ideas?

    Ceviche is one of the more fun foods to make because you don't actually cook anything. I usually get about 1/2 lb. of any type of white fish, cube that and pour over it juice of 3 limes and rice wine vinegar. Then you start adding stuff. Spicy peppers go really well, but if you let them stay in too long they'll make the whole thing too hot (maybe remove them after the initial 12 hours). Chop tomato, bell peppers, onion (I prefer red), mince garlic, parsley, if you want to you could add a zest of ginger. Make sure the whole thing is covered, pop it in the fridge, stir it every couple of hours and after about 12 hours Voila! tasty summer treat. great with tortilla chips or flatbreads. (a tip: the more colors in it the more appealing it looks, so opt for different colored bell peppers and feel free to try new veggies in it, it's pretty hard to mess this stuff up. It will hold in your fridge for about 1 1/2 weeks. Enjoy

    It's called Cheviche. Typically it is done with bay scallops, prawns, and white fish. However you can really use any type of seefood you like, just be sure to slice it thin so it'll 'cook' quicker and all the way through. You don't need to use lime juice, but can use any type of acidic juice.

    it is called seviche. the acid in the juice "cooks" it. i saw it on a food network show and it looks like you basically put shrimp or whatever fish you are using in a glass container and totally cover it with the juice, but i am not sure of the time frame. at least an hour, i would think, but i could be wrong
