What food pairs best with a well aged California cabernet?

Recipes appreciated. I have some early to mid-nineties cab in my cellar. I like to throw dinner parties and could use some insights.

    red meat or pasta with marinara.

    Steak marinade- soy sauce, teryoki, garlic, lea and perrins, cayenne pepper, black pepper, salt to taste, little butter, if you have any cheap red wine or brandy laying around the house, throw that in with it. you are good to go bon appetite

    Cheese is great with Cabs. Sharp Cheddar or blue cheeses are the best match. I love these cheddar crackers. Give them a shot

    roasted chicken or beef

    since the cabs are heavier wines, i would pair them with something substantial that can hold it's own. Roasted root vegetables, ( potatoes, carrots, onions, shallots).

    Even fish if it's with a tomato or heavy sauce.

    Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open that wine and enjoy.

    A good steak goes great with Cabernet. Don't make it too spicy though.

    heavy cheeses like peccorino or parano and most red meats

    an excellent choice would be veal tenderloin with a mild berry glaze and a solid side of pasta with red sauce
