Best Salsa Recipie?
I am looking for the best salsa recipie out there. What I would really, really like is the salsa recipie for Chi Chi's salsa (not the kind in the bottle, the kind you got when you went to the restaurant- the fresh stuff).
I am a salsa fanatic and would love to try your recipies!!
Yeah, I have my own recipie that I use. I throw in a little of this and a little of that. I am going to try all of these, of course. Looking good so far!

Hi, if you want a salsa that will "lift your elevator" this is the one to try. It is awesome.
Salsa
20 lbs. ripe Roma tomatoes
18 fresh jalapenos
5 lg. onions
4 lg. green peppers
2 whole bulbs of garlic
1/4 cup fresh cilantro
1/2 cup white vinegar
2 tbs. oregano
1 tbs. cumin
1 tbs. salt
3 tbs. chili powder
2 tbs. cayenne pepper 1 tbs. sugar
2 small cans of tomato paste added near the end of cooking to thicken sauce
Chop all vegetables into appropriate sizes. Mix all spices together before adding to sauce. We used a canner because of the volume of sauce. Bring up to a boil and then simmer until all the vegetables are still a little firm. This takes approximately 3 to 4 hrs. When you are done cooking it bring it back to a boil and then jar it, your jars should be preheated in the oven to 170 degrees.
You can cut this recipe in half if you do not want to make this much. If you half this recipe you may need to reduce the cooking time slightly.

My wife makes the absolute best salsa ever!
Unfortunately, there is really no "recipe". It's more of a "use the force" sort of thing. But here are the ingredients.
1) A mixture of heirloom tomatoes - *This is absolutely key*. the heirlooms give a much better flavor than those trans-genetic hot house grown balls of Styrofoam in your local mega mart. Use a couple of the "black" Russian ones, a couple of yellow ones, and several of the red "beef stake" varieties.
2) Fresh Onion
3) Fresh Garlic
4) Fresh Cilantro.
5) Salt
6) Olive Oil
7) Fresh Jalapenos (Some other types of fresh peppers like Bells or Gypsy peppers work well to).
8) Pickled Jalapenos.
9) Sometimes a dash of vinegar depending on how many pickled Jalapenos you use.
Put them in a blender and whip them up until the big chunks are incorporated.
Let sit in the fridge for a couple of days to let the flavors blend.

1 28-oz can whole tomatoes, preferably fire-roasted (Muir Glen makes an excellent product.)
1 7-oz can green chiles, chopped (or one large 6 inch or two smaller anaheim chiles, roasted under a broiler or directly on a gas stove burner so that the outer skin has completely blackened. Put into a brown paper bag for a few minutes after roasting to loosen the blackened skin. Remove and discard the blackened skin. Remove the stem, seeds, and ribs. Chop.)
1 clove of garlic, or 1/2 teaspoon garlic salt
2 green onions (scallions), chopped, including the green parts (about 1/3 cup)
1 Tbsp olive oil
2 teaspoons red wine vinegar
1/4 teaspoon dried oregano (can supplement with fresh)
1/4 cup of very loosely packed fresh chopped cilantro
Salt
Freshly ground black pepper
1 Remove just the tomatoes from the can of whole tomatoes, place in a medium sized non-reactive mixing bowl. Using your fingers, or a fork and a sharp small knife, shred or break up the tomatoes.
2 Mix in chopped green chiles, green onions, garlic (or garlic salt), olive oil and vinegar. Add back in about 1/4 cup of the tomato sauce from the can of whole tomatoes. Sprinkle on about 1/4 teaspoon of dried oregano. Mix in and taste. Adjust if needed. Add cilantro, and salt and pepper to taste.
Refrigerate when not using. Will keep several days.
Makes 2-3 cups.

Irresistible Fruit Salsa and Homemade Cinnamon Chips
(I know you are looking for Chi-Chi's style Salsa but I figured I would throw this one out there, it's great to serve to the girls with some white sangria out on the patio during the summer, hope you enjoy!)
INGREDIENTS:
2 kiwis, peeled, cored and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 pound strawberries
1/2 pound blackberries
2 tablespoons white sugar
1 tablespoon brown sugar
3 tablespoons fruit preserves, any flavor (I mix red current and blackberry 1-1/2 tbsp each)
10 (10 inch) flour tortillas
butter flavored cooking spray
2 cups cinnamon sugar

DIRECTIONS:
In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
Preheat oven to 350 degrees F (175 degrees C).
Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit and spice mixture.

Salsa
3 Lrg Tomatoes Diced
1 Lrg Onion Diced
2 Jalapeno Peppers Chopped (remove seeds if you don't want it too hot - I leave mine in)
1 Garlic Clove (Minced)
1 lemon (juice only)
Salt
Pepper
Combine all vegetables together in a large bowl and squeeze in lemon juice, sprinkle on salt and pepper. Mix thoroughly. Eat room temp or place in frig till cold.

Chop all these
1 onion
1 habinaro
2 jalepenos
1 /8 cup cilantro
6 large tomatoes (or 1 large can)
salt & pepper for flavor
1 teaspoon chili powder
1/2 tsp garlic powder
1 sm. can tomato sauce
combine all in a pot cook till all is done, eat warm, cold.
this is a good one.
