    You'll love this one. I can't wait 'til I have a million zucchini so I can make this cake. It's pretty and no one ever has a clue that it's so moist because of the zucchini. It's way better than all those plain cinnamon and spice cakes.

    CHOCOLATE PECAN ZUCCHINI BUNDT CAKE

    3 C flour

    1 1/2 t baking powder

    1 t baking soda

    1 t salt

    4 eggs

    3 C sugar

    3 packs soft baking chocolate, unsweetened or 3 squares, melted

    1 1/2 C oil

    3 C grated zucchini

    1 C chopped pecans.

    Beat the eggs and sugar until light yellow. Add chocolate, then oil. Sift in dry ingredients and blend well. Fold in zucchini and pecans. Mix well and pour into bundt pan. Bake in a preheated 350 degree oven for 1 hour and 15 minutes. Cool 15 minutes. Cool on a baking rack. Sprinkle with powdered sugar.

    Zucchini Cake Recipe

    Ingredient:

    3 eggs

    1 cup salad oil

    2 cups sugar

    2 cups grated zucchini

    2 cups flour

    1 teaspoon baking powder

    2 teaspoons baking soda

    1 teaspoon salt

    3 teaspoons cinnamon

    1 teaspoon vanilla

    1 cup chopped nuts (optional)

    12-16 servings

    1 hour 15 minutes 15 mins prep

    Beat eggs, salad oil and sugar until creamy.

    Then blend in the remaining ingredients Grease and flour Bundt pan.

    Bake for 1 hour at 350 degrees.

    Chocolate Zucchini Cake This is really moist and fudgie

    Cream together in large bowl:

    1/2 cup margarine

    1/2 cup oil

    2 cups sugar

    Add:

    2 eggs

    1 tsp vanilla

    1/2 cup sour milk (1 1/2 tsp vinegar in 1/2 measuring cup. Fill rest of the way with milk. Let set a few minutes,till slightly curdled).

    Mix well.

    Sift together:

    2 1/2 cups flour

    1/2 tsp baking powder

    1 1/2 tsp baking soda

    1 tsp salt

    1/4 cup cocoa

    Gradually add to egg mixture, mixing well

    Stir in 2 cups peeled and grated zucchini

    Pour into prepared 13x9 pan

    Sprinkle top with chocolate chips and chopped nuts of your choice

    Bake at 325 for 35 - 45 minutes. Test with toothpick.

    ZUCCHINI BREAD

    3 eggs

    1 c. veg. oil

    2 c. sugar

    2 c. grated zucchini

    2 tsp. vanilla

    chopped nuts (optional)

    3 c. flour

    1 tsp baking soda

    1 tsp. salt

    3 tsp. cinnamon

    1/2 tsp. baking powder

    Preheat oven at 325 F. Beat eggs until light. Add oil, sugar, zucchini, vanilla and nuts, if desired. Combine flour, baking soda, salt, cinnamon, and baking powder. Add egg mixture and mix until well blended. Pour batter in loaf pans. Bake at 325 F for 1 hour. Makes 3 loaves.

    INGREDIENTS:

    4 eggs

    2 cups white sugar

    1 cup vegetable oil

    2 cups all-purpose flour

    2 teaspoons ground cinnamon

    1 teaspoon salt

    2 teaspoons baking powder

    1 teaspoon baking soda

    1 (8 ounce) can crushed pineapple, drained

    1 cup chopped walnuts

    2 cups grated zucchini

    2 teaspoons vanilla extract

    1 cup confectioners' sugar

    2 tablespoons milk

    DIRECTIONS:

    Preheat oven to 350 degrees F (175 degrees C). Grease and flour a tube pan.

    Sift together flour, cinnamon, salt, baking powder, and baking soda on to a piece of waxed paper.

    In a large bowl, beat eggs and sugar until light colored. Mix in oil. Add sifted ingredients to egg mixture, and beat for 2 minutes. Stir in pineapple, chopped nuts, vanilla, and zucchini. Mix thoroughly. Pour batter into prepared pan.

    Bake for 80 minutes, or until tester inserted in the center of the cake comes out clean. Cool for 30 minutes.

    To Make Glaze: In a small bowl, combine the confectioners' sugar and the milk. When cake has cooled, pour glaze over cake.
