Gooey Toffee Butter Cake

Prep Time: 20 minutes
Cook Time: 50 minutes
Yield: 20 to 24 squares
Cake:
1 (18.25-ounce) box yellow cake mix
1 large egg
1/2 cup (1 stick) unsalted butter, melted
Filling:
1 (8-ounce) package cream cheese, softened
2 large eggs
1 teaspoon pure vanilla extract
1 (16-ounce) box confectioners' sugar
1/2 cup (1 stick) unsalted butter, melted
1 cup almond toffee bits or chocolate toffee bits
Preheat the oven to 350 degrees F. Lightly grease a 13 by 9 by-2-inch baking pan.
For the cake: In the bowl of an electric mixer, combine the cake mix, egg, and butter and mix well. Pat into the bottom of prepared pan and set aside.
For the filling: Still using an electric mixer, beat the cream cheese until smooth. Beat in the eggs and vanilla. Dump in confectioners' sugar and beat well. Reduce the speed and slowly pour in butter. Mix well. Fold in toffee bits.
Pour filling onto cake mixture and spread evenly. Bake for 40 to 50 minutes. Don't be afraid to make a judgment call on the cooking time, because oven temperatures can vary. You want the center to be a little gooey, so don't bake it past that point!
Remove from oven and allow to cool completely. Cut into squares. Just remember that these wonderful cakes are very, very rich, and a little will go a long way.

Spicy Black-Eyed Peas

Cook Time: 1 hour
Yield: 8 servings
4 slices bacon
1 medium onion, chopped
1 (16-ounce) package dried black-eyed peas, washed
1 (12-ounce) can diced tomatoes and green chiles
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon freshly ground black pepper
3 cups water
In a large saucepan, cook the bacon until crisp. Remove the bacon, crumble, and set aside to use as a topping for the peas. Saute the onion in the bacon drippings until tender. Add the peas, diced tomatoes and green chiles, salt, chili powder, pepper and water. Cover and cook over medium heat for 45 minutes to 1 hour, or until the peas are tender. Add additional water, if necessary. Serve garnished with crumbled bacon.

Grandmother Paul's Sour Cream Pound Cake

Cook Time: 1 hour 20 minutes
Yield: 8 to 10 servings
1/2 pound (2 sticks) butter
3 cups sugar
1 cup sour cream
1/2 teaspoon baking soda
3 cups all-purpose flour
6 large eggs
1 teaspoon vanilla
Preheat oven to 325 degrees F.
In a large mixing bowl, cream the butter and sugar together. Add the sour cream and mix until incorporated. Sift the baking soda and flour together. Add to the creamed mixture alternating with eggs, beating each egg 1 at a time. Add the vanilla and pour the mixture into a greased and floured 10-inch tube pan. Bake for 1 hour 20 minutes.

Mashed Baked

Cook Time: 1 hour
Yield: 8 to 10 servings
4 cups frozen hash browns
1 (7.6-ounce) package butter and herb mashed potato mix
1 stick butter, softened
4 ounces cream cheese, softened
1 cup shredded Monterey Jack cheese
1/2 cup sour cream
1/2 teaspoon garlic salt
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups boiling water
2 cups prepared French-fried onion rings
Preheat oven to 350 degrees F.
Bring a pot of water to the boil and add the hash browns. Cook for 5 minutes and drain. In a large bowl, mix together the cooked hash browns, mashed potato mix, butter, cream cheese, jack cheese, sour cream, garlic salt, salt and pepper. Stir in the boiling water. Place in a greased 2-quart casserole dish. Bake for 35 to 45 minutes. Sprinkle the onion rings over the casserole and bake for about 5 to 8 minutes longer until onions are golden brown.

Southern Fried Chicken

Yield: 4 servings
House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Southern Fried Chicken:
4 eggs
1/3 cup water
1 cup hot red pepper sauce
2 cups self-rising flour
1 teaspoon pepper
House Seasoning
2 1/2-pound chicken, cut into pieces
Oil, for frying, preferably peanut oil
To make the House Seasoning, mix ingredients together and store in an airtight container for up to 6 months.
In a medium size bowl, beat the eggs with the water. Add enough hot sauce so the egg mixture is bright orange. In another bowl, combine the flour and pepper. Season the chicken with the House Seasoning. Dip the seasoned chicken in the egg, and then coat well in the flour mixture.
Heat the oil to 350 degrees F in a deep pot. Do not fill the pot more than 1/2 full with oil.
Fry the chicken in the oil until brown and crisp. Dark meat takes longer than white meat. It should take dark meat about 13 to 14 minutes, white meat around 8 to 10 minutes.

The Lady's Cheesy Mac

Yield: 8 to 10 servings
4 cups cooked elbow macaroni, drained
2 cups grated Cheddar
3 eggs, beaten
1/2 cup sour cream
4 tablespoons butter, cut into pieces
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup milk
Preheat oven to 350 degrees F.
Once you have the macaroni cooked and drained, place in a large bowl and while still hot and add the Cheddar. In a separate bowl, combine the remaining ingredients and add to the macaroni mixture. Pour macaroni mixture into a casserole dish and bake for 30 to 45 minutes. Top with additional cheese, if desired.

Sweet Tea

Prep Time: 10 minutes
Inactive Prep Time: 10 minutes
Cook Time: 5 minutes
Yield: 8 to 10 servings
1-ounce loose black tea
1 quart hot water
1 quart room temperature water
Simple Syrup:
5 cups sugar
3 cups cold water
Infuse loose tea into hot water for 4 to 5 minutes. Strain tea into room temperature water. Sweeten with simple syrup if desired.
For simple syrup, in a small non-reactive pot combine 5 cups of sugar and 3 cups of cold water. Slowly bring to a boil and add 6 sliced lemons and a few sprigs of fresh mint. Remove from heat. Allow to cool 10 minutes and strain.

This is a wonderful "southern" recipe that i make over and over and we love it! It can be a bit spicy for the kids, but the adults love it. i even add in some hot sauce sometimes! I hope you try it and enjoy!
MEXICAN CASSEROLE:
1 lb ground beef
1 can cream of chicken soup
1/2 can water
1 bag of tortilla chips (you won't use the whole bag)
1 can Rotel tomatoes
1 cup grated cheddar cheese
1 tsp chopped onion
Salt and pepper (optional)
Garlic salt (optional)
Brown meat and onion ( i salt and pepper here), drain fat and set aside. Mix soup, water and Rotel tomatoes together. Place a layer of chips in a large casserole dish ( the one i use is like a corning ware dish and has " 2 liter " on one of the handles) i think it is about 6 x 6 x 3 ish inches or 7 x 7 x 3 ish? ..8x8 would be fine i'm sure...whatever you wanna fill ), then a layer of meat, soup mixture and then cheese. Repeat layers until all ingredients are used ( I always just do 2 layers ).
Bake for 30 minutes at 325 degrees or until bubbly.

If you really want "Southern" receipes, your talking about greens, okra, beans, chicken fried steak, things like that.
Here's a reciepe for OKRA:
Bag frozen okra
1 can tomato sauce (small)
Half a yellow onion, sliced
Garlic Salt
Garlic Powder
Season Salt
Lemon pepper
Take frozen okra, put a little water in pan, and put on low covered until completely defrosted, drain.
Put back on stove, add can of tomato sauce with a can of water.
Add the onion and seasonings.
The amount of seasoning is about a half teaspoon of garlic powder and about a quarter of all the rest, except the lemon pepper. With that two good healthy dashes. Stir well, cover and simmer about 30 min or so.
Now that is Southern...
Or with some Greens...
You can use any you like; turnip, polk salad, mustard, but I prefer the mustard greens.
To make those, you want to put them in a good water bath. Meaning, fill the sink with water, break them off the stalk and wash them good.
After washing and draining them, tear them in large pieces, getting rid of big stems.
Put them in large skillet, cast iron works good, with a little bit of bacon fat. Turn on medium and you then add a little bit of cut up turkey, or ham, either one.
Sprinkle with salt and pepper, and a little garlic powder, cover tightly and let cook, stirring often until tender, about 15-20 min, depending on how much is in the pan.
Don't worry they will shrink down quite a bit. One bunch at the store will feed about 2-3 people after cooking. Serve that with some cornbread, and you will see true Southerners enjoy throughly.

Try the internet and bookstores for cook books. Don't think anyone is going to give you a run-down of their recipes here(at least, I'm not). There are many resources available to you; you just have to look.

if you count mexico as south may i suggest the enchilladas or quesadillas maybe some pupusas or a bit of menudo soup how about fajitas? or tortas those are some main dishes of mexico and they are delicios =D
