Potato and Bacon Salad
INGREDIENTS:
5 eggs
4 slices bacon
2 tablespoons Dijon mustard, or to taste
1 cup mayonnaise
3 stalks celery, minced
2 pounds small potatoes
2 tablespoons chopped fresh parsley
salt and pepper to taste
DIRECTIONS:
Place the potatoes in a pot with enough water to cover, and bring to a boil. Cook for about 20 minutes, or until tender. Drain and cool.
Meanwhile, place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and place in a bowl of cold water to cool.
Peel the eggs, and place 3 of them into a large bowl. Reserve the rest for later. Mash the eggs in the bowl with a fork. Stir in the mustard, mayonnaise, celery, salt and pepper. Set aside.
Cook bacon slices in the microwave for about 4 minutes, until crisp, or fry in a skillet over medium-high heat. Crumble 2 of the bacon slices into the mayonnaise mixture. Reserve the rest for garnish.
Peel and chop the potatoes, and stir into the bowl until evenly coated. Slice the 2 remaining eggs, and place on top of the salad.
Crumble the remaining bacon over the eggs, then sprinkle parsley over the top.
Potato Salad With Bacon, Olives, and Radishes
INGREDIENTS:
5 potatoes
1 pound bacon
2 stalks celery
4 small green onions
12 stuffed green olives
5 radishes
1/4 cup mayonnaise
1 tablespoon lemon juice
DIRECTIONS:
Wash and peel the potatoes and cut into 1/2 to 3/4 inch pieces. Bring a large pot of salted water to a boil. Add the potatoes and cook until tender but still firm, about 10 minutes.
Slice the bacon into small pieces and cook over medium high heat in a large, deep skillet until evenly brown. Do not overcook.
Chop the celery, green onions, stuffed olives and radishes into small pieces and put into a large bowl. Add the potatoes and bacon and mix together. Add the mayonnaise and lemon juice to taste, stir, and place in the refrigerator for a few hours to chill before serving. You may want to add a few sliced hard boiled eggs on top. ENJOY!!!
Cheesy Potato Salad
INGREDIENTS:
2 1/2 pounds red potatoes, cubed
1 cup sour cream
1/2 cup mayonnaise
1/4 cup white sugar
1/2 bunch green onions, chopped
1 cup shredded Cheddar cheese
1 tablespoon real bacon bits
DIRECTIONS:
Place the potatoes into a pot, and fill with enough water to cover. Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork. Drain, and set aside to cool.
In a large bowl, mix together the sour cream, mayonnaise, sugar, half of the onions, and half of the cheese. Gently stir in the cooled potatoes. Top with remaining cheese and onions, and sprinkle bacon bits over the top.
Whipped Mashed Potatoes
INGREDIENTS:
5 potatoes, peeled and quartered
3 tablespoons butter
1/8 cup milk
DIRECTIONS:
Fill a medium size saucepan half full of water, and add a pinch of salt. Bring to a boil. Add potatoes to pot; the water should cover the potatoes. Simmer for 10 minutes, or until potatoes are easily pierced by a fork. Drain.
Transfer potatoes to a large mixing bowl. Add butter or margarine and milk, and mash with a potato masher. When well mashed, whip for a minute or two with an electric mixer set on medium speed.

2 1/2 pounds assorted small potatoes, such as fingerling, Yukon Gold or red Bliss, scrubbed
1 acorn squash, peeled and cut into 1 1/2-inch chunks
3 cups butternut squash, cut into 2-inch chunks
1/4 cup extra-virgin olive oil, or more to taste
1 tablespoon fresh rosemary
1 tablespoon fresh thyme
3 cloves garlic, peeled and roughly chopped
1 teaspoon salt
3/4 teaspoon freshly ground black pepper
Preheat the oven to 400 degrees F.
Place the potatoes and squash in a large bowl and toss with olive oil, rosemary, thyme, garlic, and salt and pepper to coat well. Transfer vegetables, with your hands, to a large baking sheet and spread into a single layer, keeping any leftover oil from the bowl. Roast the vegetables until tender, turning every 10 minutes with a long-handled spoon, about 45 minutes to 1 hour.
Remove from the oven and add as much leftover oil to the vegetables as desired, and season to taste. Serve immediately

Potato Roasted Buns:
ingreidents:
2 mashed potatos
salt: as per taste
chilli powder: as per taste

Method:
Mix all the ingreidents together. Cut the bun horizentally into two pieces. Apply the mixture on the lower side of the bun. Apply some butter on the pan. Heat for a while and put the mixture side of the bun down on the pan. Let it get golden brown of medium flame. Then turn it so that other side also get a little brown. Do the same with the other part of the bun (but without applying mixture on it). Sprinkle some spring onion and tomato sauce on it and serve it to yourself. ENJOY IT.

For a different and tasty potato variety, cut a raw potato lengthwise. Place a whole bay leaf on one half then put the other half back on making a "sandwich". Either tie the potato together with a string or wrap in plastic wrap. Microwave for 5-8 minutes depending on the size of your potato. Remove the bay leaf and enjoy. It is a real different treat with just a little salt and pepper. Enjoy.

Well you didn't say it had to be white so how about sweet potato fries? Slice up a big one just like fries and toss with some olive oil and salt, pepper and cayenne pepper or any other spice you prefer. Bake in 400 degree oven in a shallow baking dish for about fifteen minutes,just keep and eye on them so they don't burn. They should be crispy though. You can serve them with a vanilla honey dipping sauce or BBQ sauce. Get creative. It is one of my favorite dinners alone in front of the television or reading a good book. Healthy and filling.

Potatoe Cake
Mince Pork, Dice Carrot, Dice spring onion, Mashed Potatoes, pepper and salt. Mix all together and pan fried till golden brown.

Home fries. Scrub potatoes and cut into 1 inch chunks (peeling optional). Boil 15 min in water until tender. Drain. Fry in a pan with a healthy splash of oil. Fry on highe heat until golden. Shake on salt, pepper and at the last minute, some paprika (for color).

slice the potatoes thin
place them in a baking dish
pour some cream or milk about 3/4 way up to potatoes
put a few dabs of butter on top
sprinkle with cheese
bake at 350 until cheese is brown on top

diced potatoes onion, green peppers, garlic and Italian seasoning place in bowl cover with plastic wrap and heat in microwave for 4 min let cool a bit before uncovering. alacazam! Potatoes and very easy add a little butter and enjoy

Maked garlic mashed potatos. Just conventionally mash and cook potatos and add in fresh chopped garlic and some milk to thin a bit, salt, black pepper and butter to taste and gently cook until the garlic taste is throughout the pot and serve.

have you tried latkes? peel 3 lg potatoes and chop fine in a processor add 1 lg egg and mix well season with salt and pepper to taste, use a 2" scoop and drop into hot oil @ 1/2" flatten and fry til golden brown on both sides, enjoy with sour cream ketchup or applesauce, can add onion or garlic if desired
