    Andi's Own Delightful Brunch Burritos

    Original recipe yield: 4 burritos.

    Prep Time:15 Minutes Cook Time:15 Minutes Ready In:30 Minutes Servings:4

    INGREDIENTS:

    butter flavored cooking spray

    6 cloves garlic, crushed

    1 (8 ounce) package mushrooms

    1 teaspoon garlic salt

    6 eggs, beaten

    4 (10 inch) flour tortillas

    2 cups shredded Monterey Jack cheese

    16 cherry tomatoes

    1 (5 ounce) package alfalfa sprouts

    DIRECTIONS:

    Liberally spray a medium saucepan with cooking spray. Repeat spraying while cooking as needed. Over medium heat, cook the garlic approximately 3 minutes. Stir in the mushrooms, and season with garlic salt. Cook until mushrooms are tender, about 3 minutes, and set aside.

    In the same saucepan, scramble eggs. Stir in the mushrooms, and continue to scramble until eggs are firm.

    Transfer 1/4 of the egg mixture into each tortilla. Top each with 1/2 cup cheese, 4 cherry tomatoes and 1/4 of the sprouts. Roll tortillas, and serve.

    Ham Salad Pitas

    Prep Time:15 Minutes Cook Time:4 Minutes Ready In:19 Minutes Servings:4

    INGREDIENTS:

    1 cup reduced fat sour cream

    2 tablespoons lemon juice

    1 teaspoon yellow mustard

    1 cup cooked ham

    1 cup mozzarella cheese

    1/4 cup blanched slivered almonds

    1/2 cup seedless green grapes, halved

    3 tablespoons diced green onion

    4 pita breads, halved

    DIRECTIONS:

    Combine sour cream, lemon juice and mustard in a bowl. Add ham, cheese, almonds, grapes and onions. Toss lightly to coat.

    Divide ham mixture evenly between pita pockets. You may eat these as is or heat them briefly. If you choose to heat them, do two halves at a time in the microwave for 1 minute.

    Get a thermos and add things like mac and cheese, tuna noodle casserole, stews, soups, hot dogs and chili....keep your eye on the thermos, though, once the other kids find out what's in there, they'll eat it before you have a chance!
