Yeast is a microscopic creature with some of the properties of algae, some of bacteria, and some of those associated with fungi. It is most closely related to the latter. You don't "Create" it, just feed it and watch it grow. Yeast breaks down simple sugars to ethyl alcohol and carbon dioxide. When dry it forms resistant spores that can survive long periods of inactivity. Carbonated water is made by injecting high pressure carbon dioxide into cold water which dissolves some of it and holds on when confined as in a bottle of pop. Most commercial carbon dioxide comes from breweries so yeast does have a part in it but only indirectly.

Yeasts are single-celled (unicellular) fungi, a few species of which are commonly used to leaven bread, ferment alcoholic beverages, and even drive experimental fuel cells. Most yeasts belong to the division Ascomycota, though some are Basidiomycota. A few yeasts, such as Candida albicans, can cause infection in humans (Candidiasis). More than one thousand species of yeasts have been described. The most commonly used yeast is Saccharomyces cerevisiae, which was domesticated for wine, bread, and beer production thousands of years ago.
