What's the difference between gelato and ice cream? Does anyone have a great gelato recipe?

    Creamy Gelato

    2 1/2 cups milk

    1/2 cup heavy cream

    3/4 cup sugar

    5 large egg yolks

    In a saucepan heat the milk and cream and reduce over medium heat until 2 cups remain. In a large bowl, using a whisk, beat the sugar with the egg yolks until the mixture is light and fluffy.

    Gradually pour the hot milk mixture into the egg mixture, whisking constantly. Heat the mixture over simmering water, stirring constantly with a whisk or wooden spoon, until it thickens enough to coat the spoon.

    Make sure not to overheat or let the mixture coagulate. When thickened remove the bowl from the heat and continue stirring for a minute to ensure the mixture is uniformly cooked.

    Let cool to room temperature, refrigerate, covered, until completely cold, preferably overnight.

    Process the mixture in an ice cream freezer following the manufacturers instructions. Serve immediately. Yield: approximately 3 1/2 cups

    No recipe but ... the difference between gelato and ice cream is gelato has more flavor and twice the sugar of regular ice cream

    CHOCOLATE GELATO

    There are no eggs in this recipe — it's the cornstarch that gives the gelato a smooth, silky texture. Fine-quality chocolate provides its rich flavor.

    Active time: 20 min Start to finish: 5 hr (includes chilling and freezing)

    3 cups whole milk

    1/4 cup sugar

    3 tablespoons cornstarch

    Scant 1/4 teaspoon salt

    7 oz fine-quality bittersweet chocolate (not unsweetened), finely chopped

    Special equipment: an ice cream maker

    Bring 2 1/4 cups milk just to a boil in a 4-quart heavy saucepan over moderate heat. While milk is heating, whisk together sugar, cornstarch, salt, and 1/4 cup (cold) milk in a bowl until smooth, then whisk into boiling milk and bring to a boil over moderate heat, whisking. Boil, whisking frequently, 3 minutes (mixture will be very thick). Remove from heat.

    Bring remaining 1/2 cup (cold) milk just to a boil in a 1-quart heavy saucepan over moderate heat. Pour hot milk over chocolate in a bowl and let stand until chocolate is melted, about 1 minute, then whisk until smooth. Stir into cornstarch-milk mixture and force through a fine-mesh sieve into a bowl. Cool slightly, stirring frequently to prevent a skin from forming, then cover surface with wax paper and chill until cold, at least 1 1/2 hours.

    Freeze mixture in ice cream maker, then transfer to an airtight container and freeze until hardened, about 3 hours. Let soften 5 minutes before serving.

    Cooks' note:

    • Gelato keeps 1 week.

    Gelato is European style ice cream that has very little air whipped into it and is made from a lower butterfat cream than most super premium ice creams.

    To make a decent gelato requires professional equipment, really not geared to the home cook.

    no gelato recipe, but the diff is that gelato is not as fattening and is made from milk/ not cream,and it is more richer and has more intense flavor! mmmmmm

    gelato is ice cream in italian,same same thing!only italians don't have "invented" flavors like we do in us,like bubble gum or some funky colored ice creams,they have more natural flavors like cream,eggnog,they do have dulce de leche,and when u buy a cone over there u get 3 flavors in that cone!

    They are the same.

    Gelato means frozen in Italian, same as helado in Spanish.
