Help, I'm looking for recipes for sweet potatoes...anything. thanks:)?

    I cut some up once like french fries and seasoned them with garlic powder & salt & pepper and some olive oil and baked them in the oven on a cookie sheet. They were really good!

    EASY SWEET POTATO PIE

    Number of Servings: 1 pie Prep Time: 1 hour Skill Level: Easy

    Ingredients

    1 9-inch unbaked pie shell

    1 large sweet potato, boiled

    6 tablespoons butter

    3 eggs

    3/4 cup sugar

    1/2 cup milk

    1/2 teaspoon cinnamon

    1 teaspoon vanilla

    Instructions:

    1. Preheat oven to 400F.

    2. Peel boiled sweet potato and place in large mixing bowl. Mash with butter.

    3. Add eggs, sugar, milk, cinnamon and vanilla and mix well.

    4 Turn out into pie shell and bake for 15 minutes. Lower temp. to 325F and bake another 30 min.

    Serve as a side dish at holiday dinners or as a dessert with whipped cream.

    Our family makes this every Thanksgiving.

    MICHIE's SWEET POTATO SOUFFLE:

    3 lbs. sweet potatoes, peeled & cut into cubes

    2 eggs

    1/2 cup brown sugar - divided

    1/2 cup butter - melted - divided

    1 teaspoon salt

    1 teaspoon ground cinnamon

    up to 1/2 cup orange juice

    1 cup chopped walnuts

    large marshmallows

    In a large saucepan over high heat, bring potatoes to boil, reduce heat; cover and simmer 15-20 minutes and drain.

    Beat potatoes until slightly smooth, beat in eggs, 1/4 cup brown sugar, 1/4 cup melted butter, salt and cinnamon.

    Starting with 1/4 cup orange juice, make mixture moist and fluffy.

    Spread in a 2-3 quart pan. Top with nuts. Sprinkle 1/4 cup brown sugar, then 1/4 cup melted butter. Place Marshmallows on top.

    Bake at 350 degrees for 25-30 minutes. Don't let marshmallows over cook.

    Glazed Sweet Potatoes

    2 med. sweet potatoes

    1/4 tsp. salt

    2 tbs. butter

    1/8 tsp. nutmeg

    1/4 cup maple syrup

    1/4 cup apple juice

    1/4 cup chopped pecans

    Boil sliced 3/4 inch slices of potatoe 6-7 min. Remove and place in baking dish. In a saucepan combine butter, syrup & juice. Bring to boil & pour over potatoe. Scatter pecans over. Bake 25-30 min. at 400 degrees. Soooo good!

    I love candied sweet potatoes. You take a casserole dish, put your sweet potatoes in(drained if from a can) little pinch of sugar and cinnamon,1 tablespoon of butter and then top with mini marshmalllows and then bake in the oven for 25 minutes on 350 degree's, till the top starts getting brown from baking...YUM-O!! Good luck!!

    Sweet Potato, Pecan, Parmigiano-Reggiano Casserole

    3 cups mashed roasted sweet potato pulp

    2 cups grated Parmigiano-Reggiano cheese

    4 tablespoons softened butter

    2 eggs, beaten

    Pinch salt

    1/2 cup chopped roasted pecans

    Preheat oven to 350 degrees. In a large mixing bowl, stir together sweet

    potatoes, cheese, butter, eggs and salt until well mixed and smooth. Pour

    into a buttered baking dish and top with pecans. Bake for 30 minutes.

    Sausage Sweet Potato Casserole

    INGREDIENTS

    1 can (20 ounces) pineapple chunks in juice

    1 can (about 18 ounces) sweet potatoes, sliced 1-inch thick

    12 to 16 ounces smoked sausage, links or sliced in serving-size pieces

    3 tablespoons brown sugar

    2 tablespoons cornstarch

    1/4 teaspoon salt

    1 tablespoon butter

    Prep

    Directions for sweet potato and sausage casserole

    Drain pineapple, reserving juice in a 2-cup measure. Add water to juice to make 1 1/2 cups. Arrange pineapple chunks, sliced sweet potatoes, and sausage in a lightly greased shallow baking dish.

    In a small saucepan over low heat, combine brown sugar, cornstarch, and salt. Gradually stir in reserved pineapple juice. Cook, stirring constantly, until thickened and bubbly; cook and stir for 1 minute longer. Remove from heat; stir in butter. Pour mixture over sausage and sweet potato mixture. Cover and bake at 350° for 30 to 40 minutes, until sweet potato casserole is heated through.

    Sweet potato casserole with sausage serves 4 to 6

    In Japan sidewalk vendors sell roasted (baked) sweet potatoes off their carts. They are served with butter and are totally yummy. You can also smell them for a couple of blocks and that is the fragrant smell I associate with fall.

    Bake them in oven until soft. About 325. Slice them down the middle stuff it with brown sugar, then honey butter, top it off with cinnaman and caramilized pecans. If you dont want to buy a premade honey butter, just melt down some honey and butter and pour it on top

    i love to grill them. you can grill them whole if you have a metal potato rack. if not , slice them like huge fries and wrap them in aluminum foil. put butter and brown sugar and marshmallows in the packet. 225 or so for about 1 1/2 to 2 hrs. make sure to check them if possible about 2/3 done and see how much longer you may need to go. unless you have one of those new fancy grills its kinda hard to keep a steady temp. i use a meat thermomiter stuck in a hole in the top of my grill.
