I need a good healthy, low fat recipe for a salad dressing?

like a vinegarette, or an oil based dressing, I would love to hear your recipes or ideas,Thanks!!

    ZESTY CITRUS VINAIGRETTE

    This dressing lends zesty flavor with no fat. Serve

    it on a salad of spinach leaves, mandarin orange segments,

    sliced celery and croutons.

    2 Tbsp powdered fruit pectin

    1 tsp sugar

    2 Tbsp chopped fresh parsley or 2 tsp dried

    1/4 tsp salt

    1 tsp chopped fresh oregano or 1/4 tsp dried oregano

    Dash ground red pepper (cayenne)

    1/2 cup water

    1 Tbsp frozen orange juice concentrate, thawed

    1 Tbsp white wine vinegar or cider vinegar

    1 garlic clove, minced

    Combine all ingredients in small jar with tight fitting lid; shake to blend well.

    I make a honey-mustard dressing by mixing together:

    1 blob of mustard (I like fancy dijon or stone ground)

    1 blob of honey

    splash of balsalmic vinegar

    I don't measure the ingredients but make it up according to how much salad I have...it is always a hit at parties and it's just too easy!!!!

    Here's a fat free recipe Raspberry Vinaigrette: Frozen raspberries Sugar Apple Cider Vinegar Yellow Mustard You can adjust this to taste: Cook the frozen raspberries in a shallow pan with a small amount of water and sugar. Once the raspberries have cooked, pour the mixture into a blender. Add an equal amount of vinegar and a small amount of mustard, (the mustard will help emulsify the dressing and add a small amount of spice). Blend until the dressing is velvety and strain through a mesh strainer to eliminate the seeds. The dressing will keep, refrigerated, for up to 3 weeks - so you can make a pretty large batch. Its very versatile as it can be used as a salad dressing, or marinade for chicken, pork or fish. Salad recipe (just in case...) Baby spinach Toasted walnuts Crumbled Goats Cheese Dried Cranberries Raspberry Vinaigrette Red Onion Grilled Chicken Breast Marinate chicken breast in the raspberry vin for 2 hrs. Season both sides with salt and pepper and grill. Toss all of the other ingredients with the dressing and top with sliced chicken breast.

    I'm a caterer, and my most popular dressing is Balsamic Vinaigrette.

    2/3 Balsamic Vinegar to each 1/3 olive oil

    few springs fresh basil, chopped

    clove or 2 of garlic

    garlic salt

    start with your oil (extra virgin olive oil preferred. add seasonings, shake well. add vinegar. shake and serve.

    take apple juice, 2 oz. whisk fast and add 1 oz. oil and 1 oz. vinegar of your choice. It's called a low fat vinagarette. As for the juice, use whatever you want but the ratios are always the same

    2 parts juice

    1 Part oil

    1 part vinegar

    I found this vinagrette in one of the Barefoot Contessa books... Use a 2:1 ratio of olive oil to lemon juice (fresh is best if possible), then add (kosher or sea) salt and pepper. I love using a garlic pepper if you have it on hand....

    Start with olive oil and balsamic vinegar then add fresh herbs of your choice like dill, chives, tarragon, pepper, etc.

    pinch of salt

    pinch of freshly ground pepper

    teaspoon of freshly chopped salad herbs of your choice

    3 tablespoons lemon juice

    3 tablespoons olive oil

    1 tablespoon good quality balsamic vinegar

    whisk everything together and enjoy on the side or over fresh salad :)
