The absolute best are the ATI Fire series, or the nVidia Quadro series. Both are extremely expensive, but will provide the absolute performance. Which you should buy will depend on what software you have/are going to buy.
That said, most people use the more expensive "normal" video cards, which are the X1900XT/XTX from ATI and the 7900 series from nVidia. Both will provide ~75% of the performance, for much less money.

ATI or NVIDIA is basically all you really have to chose from when it comes to quality.
Go to the manufactures website
http://www.nvidia.com/ and it will show you all of their top models for vid cards. Or you can go to a local computer shop's website or a retail store and browse for the kind that you like, its all basically on how much you can afford, the expensive ones are the best obviously.
