Recipe for a hard fudge?

My grandfather used to make a fudge that was hard, but never wrote down how he did it. The only thing we can remember is him saying, "cocoa, cream of tartar, and beat the crap out of it." Does anyone have a recipe that is similar? We used to be able to break it into pieces and eat it like a hard candy instead of a creamy fudge. I'd really love to be able to make this. He unfortunately took his secret with him when he passed on.

    When fudge is hard like that, it's usually because it's been boiled too long. Most recipes call for fudge to be boiled to soft ball stage, so take it just a little past that and you should recreate Grandpa's texture. Pick a recipe that has less fat (or corn syrup) in it, since that helps soften the mix.

    Try this recipe:

    Old-fashioned Fudge

    2/3 C milk

    1/3 C cocoa

    2 C sugar

    dash of salt

    1/4 tsp. cream of tartar

    1 tsp vanilla

    Mix milk and cocoa in pan over low heat until cocoa is dissolved.

    Add sugar, salt and cream of tartar. Cook and stir over medium

    heat till soft ball stage. Remove from heat.

    Add 2-3 Tbls butter or margarine. Let cool till butter is melted

    (or a little longer if you want). Add vanilla. Beat with electric

    mixer until it starts to set up. Pour into buttered pan and let

    cool.

    Thank you for your question.

    This is a sugary hard fudge that I originally got from rec.food.recipes. It has gone well when I've used it.

    Rich Cocoa Fudge

    3 cups sugar

    2/3 cup cocoa

    1/8 tsp. salt

    1 1/2 cups milk

    1/4 cup butter or margarine

    1 tsp. vanilla extract

    Line 8 or 9 inch square pan with foil; butter foil. In large heavy saucepan stir together first three ingredients; stir in milk, with a wooden spoon*. Cook over medium heat, stirring constantly, until mixture comes to a full rolling boil. Boil without stirring, to 234 degrees F. on a candy thermometer. (or until syrup, when dropped in very cold water forms a soft ball which flattens when removed from water.)

    Bulb of candy thermometer should not rest on bottom of pan. Remove from heat. Add butter and vanilla. DO

    NOT STIR! Cool at room temperature to 110 degrees F (lukewarm). Beat with wooden spoon until fudge thickens and loses some of its gloss. Quickly spread into prepared pan; cool. Cut into squares. Store wrapped loosely in foil in the refrigerator.

    Wow I can remember the fudge, but have no recipe.My aunt would make it to give out at Christmas.One thing that she would say is not to make it on a rainy day---something about it turning back to sugar. Hope you get the right recipe--I'll be checking.
