what is the alchohol tolerance of bread yeast?

Obviously pretty high, as yeast eats sugar and it's waste product is alcohol. So they swim in it until they die from lack of food.

alcohol when cooked looses its affect. i assume the same happens when it is baked also so there would be no content.
