How do you keep it from falling too fast?

when making a souffle.

    Keep the pan upside down.

    When the cooking time is up, turn the oven off but do not open the oven door. Dramatic changes in temperature will cause the souffle to fall.

    If you prepare your souffle in Zero Gravity there is a good chance you can avoid the embarassment of a deflated souffle.

    No matter what you do, once you cut inot a souffle it will fall. I leave mine in the oven until I am ready to serve it, then it falls as soon as the first serving is out. Not much you can do about that.
