Melt some Velveta Cheese and add some chili to it, it makes a great dip with almost any kind of chips. A big hit at all of my parties and it doesn't cost that much !

    Mexican chicken chilli (English style):

    1/2 lb. ground chicken

    1/3 cup chopped onion

    1/3 cup chopped green pepper

    1 - 14 oz. can chopped tomatoes

1 - 14 oz. can red kidney beans

    1 - can chopped mushrooms

1 - small can tomatoe paste

    1/8 tsp. pepper, oregano, cayenne

Brown ground chicken in a non-stick frying pan until no longer pink. Add onion and pepper and continue cooking for 2 minutes. Transfer to a large pot and add remaining ingredients. Simmer for 20 minutes.

Serve with toast or dinner rolls.

Can also be cooked in a slow cooker.

You can open a can of soup for a starter. To finish off: ice cream and a favourite fruit. In England I'd serve strawberries and raspberry ripple ice cream. Choose whatever drinks you like. We would have wine, probably red with that. But Americans - could be anything from ice cold beer to Cola Cola.

my favourite very easy recipe which would go with the salad is fettucine. just need some crusty bread and no sweet desert, try cheese platter for a change and a glass of wine after. green fettucine noodles mushrooms bacon cream no seasoning or salt required fry the chopped bacon, add the chopped mushrooms, then add the cream and simmer until thickened (not too thick, reduced to about half) then mix the lot with the cooked noodles. work out your own quantities (lots of cream, the whipping/cheaper cream is fine). Leave it sit for 5 minutes before serving so its not too slippery.

what kind of b'day is it?

    Burritos are usually good.

It really depends on a bunch of factors.

    How many people?

    Age range?

    Day or Night?

Prepare something that the guests can proportion themselves and can add or delete ingredients as they wish. Not everyone eats the same thing.

Ones that you can prepare ahead of time so that you can enjoy the party too - ie Chilli and rice with garlic bread that can be left on a low heat for people to help themselves with a side salad, goulash, etc
